Fermented Black Garlic is the result of enzyme fermentation of regular organic garlic, which changes the colour from white to black.  Fermentation breaks down the active sulphur compounds found in garlic, making it easier to digest with no after breath.  The fermentation process creates a unique anti oxidant only found in fermented black garlic known as s-allyl-cysteine (SAC).

What is black garlic?

When raw white garlic undergoes 30 day ageing at 70C in a controlled humid environment, it undergoes a mallard reaction and fermentation, it transforms into black garlic, not only offering delectably sweet umami flavours and aroma, but also enhancing its nutritional profile. During this process, a highly beneficial compound, anti oxidant s-allyl-cysteine (SAC), is formed, amplifying the potential benefits of black garlic.  SAC is the key to reaping the potential benefits of black garlic. How is Nxgen Organic Fermented Black Garlic Superior?
